Caramelized Pear and Blue Cheese Salad
INGREDIENTS:
1/4 cup chopped walnuts
2-3 pears, peeled, cored, and cut into slices or chunks
2 tablespoons lemon juice
2 tablespoons honey
2 tablespoons butter
2 handfuls arugula (rocket) leaves
3.5 ounces (about 1/2 cup) blue cheese, crumbled
INSTRUCTIONS:
Prepare the pears by tossing the sliced pieces in a bowl with lemon juice and honey to coat them evenly.
Toast the walnuts by heating a dry, non-stick pan over medium heat. Add the chopped walnuts and toast them for a few minutes until fragrant.
Caramelize the pears by melting butter in the same pan. Add the honey-coated pears and cook them, turning occasionally, until they become tender and begin to caramelize.
Assemble the salad by arranging the arugula leaves on serving plates. Top each plate with the caramelized pears, sprinkle with crumbled blue cheese, and finish with the toasted walnuts. Serve immediately.
