Spicy Honey Jalapeño Chicken Skewers with Cilantro Lime Dip
Serves about 4-6
Ingredients for Skewers:
1½ pounds chicken breast or thighs, cut into bite-sized pieces
2 fresh jalapeños, finely minced
3 tablespoons honey
2 tablespoons soy sauce
1 tablespoon lime juice
1 teaspoon smoked paprika
1 teaspoon garlic powder
Wooden skewers, soaked in water
Cilantro Lime Dip:
½ cup sour cream
2 tablespoons mayonnaise
1 tablespoon lime juice
1 tablespoon chopped fresh cilantro
Salt and pepper, to taste
Instructions:
Marinate the Chicken: In a bowl, mix honey, soy sauce, lime juice, jalapeños, smoked paprika, and garlic powder. Add chicken and toss to coat. Marinate for at least 30 minutes.
Prepare the Skewers: Thread marinated chicken onto skewers.
Grill or Broil: Grill the skewers over medium heat for 4-5 minutes per side or broil in the oven until cooked through.
Make the Dip: In a small bowl, mix sour cream, mayonnaise, lime juice, cilantro, salt, and pepper.
Serve: Serve the skewers with cilantro lime dip on the side. These skewers are sweet, spicy, and bursting with flavor!
