Milk Brioche Rolls recipe

Milk Brioche Rolls recipe:

Ingredients:

  • 4 cups all-purpose flour
  • 2 eggs at room temperature
  • 1 cup whole milk, heated to about 110°F
  • 1/4 cup granulated sugar
  • 2 teaspoons active dry yeast
  • 1 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 egg (for egg wash)

Instructions:

  1. Activate the yeast: In a small bowl, combine the warm milk (110°F) with the sugar and yeast. Stir gently and let sit for 5-10 minutes, or until it becomes frothy and bubbly.
  2. Mix the dough: In a large mixing bowl, whisk together the flour and salt. Make a well in the center and add the eggs and the activated yeast mixture. Mix with a spatula or a dough hook until a dough begins to form.
  3. Knead the dough: Turn the dough onto a lightly floured surface and knead for about 8-10 minutes, or until smooth and elastic. Alternatively, you can use a stand mixer with a dough hook attachment on medium speed for about 6-7 minutes.
  4. Incorporate the butter: Gradually add the softened butter, a little at a time, while continuing to knead the dough. The dough will become sticky, but keep kneading until the butter is fully incorporated and the dough is smooth.
  5. First rise: Place the dough in a lightly greased bowl, covering it with a clean kitchen towel or plastic wrap. Allow it to rise in a warm place for about 1-2 hours, or until it doubles in size.
  6. Shape the rolls: Once the dough has risen, punch it down to release the air. Divide the dough into 12 equal portions and shape them into smooth balls. Arrange them in a greased 9×13-inch baking pan, placing them close together.
  7. Second rise: Cover the pan with a towel and let the rolls rise for another 1 hour, or until they puff up and are touching each other.
  8. Preheat the oven: Preheat the oven to 375°F (190°C).
  9. Egg wash: In a small bowl, whisk together the egg for the egg wash. Brush it gently over the top of the rolls for a golden, shiny finish.
  10. Bake: Bake the rolls in the preheated oven for 20-25 minutes, or until golden brown and cooked through. If you tap the top of a roll, it should sound hollow.
  11. Cool and serve: Allow the rolls to cool in the pan for 5-10 minutes before transferring them to a wire rack to cool completely. Serve warm with butter or your favorite spread!
