Mediterranean Baked Fish Recipe
Ingredients:
2 white fish fillets (cod, halibut, or sea bass)
1 cup cherry tomatoes (red and yellow), halved
¼ cup black olives (Kalamata or other)
3 cloves garlic, minced
2 tbsp olive oil
1 tbsp lemon juice
1 tsp dried oregano
½ tsp smoked paprika
½ tsp crushed red pepper flakes (optional)
Salt and black pepper, to taste
2 tbsp fresh parsley or thyme, chopped
¼ cup dry white wine (optional)
Instructions:
Preheat the oven to 400°F (200°C).
Prepare the fish: Pat the fillets dry with paper towels and place them in a baking dish.
Season: Drizzle olive oil and lemon juice over the fillets. Sprinkle with salt, black pepper, oregano, smoked paprika, and red pepper flakes.
Add veggies: Scatter cherry tomatoes, black olives, and minced garlic around the fish.
Optional step: Pour white wine into the dish for added depth of flavor.
Bake: Place in the oven and bake for 12-15 minutes, or until the fish is flaky and cooked through.
Garnish: Sprinkle with fresh parsley or thyme before serving.
Serve hot with crusty bread, rice, or roasted vegetables.
