Broccoli Cheese Patties

Ingredients:

2 cups broccoli florets (finely chopped)

1 cup shredded cheddar cheese (or mozzarella)

½ cup grated Parmesan cheese

½ cup breadcrumbs (or almond flour for a low-carb version)

2 eggs

1 teaspoon garlic powder

½ teaspoon salt

½ teaspoon black pepper

½ teaspoon red pepper flakes (optional)

2 tablespoons chopped parsley (optional)

2 tablespoons olive oil (for frying)

Instructions:

  1. Prepare the Broccoli

Steam or boil the broccoli for about 3–5 minutes until tender.

Drain and finely chop it.

  1. Mix the Ingredients

In a large bowl, combine chopped broccoli, cheddar cheese, Parmesan, breadcrumbs, eggs, garlic powder, salt, pepper, and parsley.

Mix well until a dough-like consistency forms.

  1. Shape the Fritters

Take small portions of the mixture and form them into patties.

  1. Cook the Fritters

Heat olive oil in a non-stick pan over medium heat.

Place the fritters in the pan and cook for about 3–4 minutes on each side, until golden brown and crispy.

  1. Serve and Enjoy

Serve hot with sour cream, Greek yogurt, or a dip of your choice.
