Banana Bread Cake with Cream Cheese Frosting

Ingredients
For the Banana Bread Cake:
- 1 ½ cups mashed ripe bananas (about 3-4 bananas)
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- ½ teaspoon cinnamon (optional)
- ½ cup unsalted butter, softened
- ¾ cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- ½ cup sour cream or plain yogurt
For the Cream Cheese Frosting:
- 8 oz cream cheese, softened (about 225g)
- ¼ cup unsalted butter, softened
- 1 teaspoon vanilla extract
- 1 ½ to 2 cups powdered sugar
Instructions
- Preheat the oven to 350°F (175°C).
- Grease a 9×13 inch baking pan with butter and lightly flour it.
- In a bowl, whisk together the flour, baking soda, salt, and cinnamon.
- In another bowl, beat the butter and brown sugar until light and fluffy.
Add the eggs one at a time, then mix in the mashed bananas, vanilla, and sour cream. - Add the dry ingredients to the wet and stir until just combined—don’t overmix.
- Pour the batter into the prepared pan and bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cake cool completely before applying the frosting.
To Make the Frosting:
- Beat the cream cheese and butter together until smooth.
- Add vanilla extract, then gradually add the powdered sugar until the frosting is smooth and spreadable.
- Spread the frosting evenly over the cooled cake.
