Fresh Cucumber and Beet Salad

Ingredients:
- 1 large cucumber, thinly sliced
- 2 medium beets, cooked and peeled, thinly sliced
- 1/4 cup chopped fresh dill
- 1/4 cup chopped fresh parsley
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions:
- In a large bowl, combine cucumber, beets, dill, and parsley.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour dressing over salad and toss to coat.
- Refrigerate for at least 30 minutes before serving.
