1 lb (450g) flank steak or sirloin, thinly sliced against the grain
1 tbsp soy sauce
1 tbsp cornstarch
1 tsp sesame oil
1/2 tsp ground black pepper
For the Sauce:
1/4 cup soy sauce
2 tbsp dark soy sauce (for deeper color and richness)
1 tbsp oyster sauce
1 tbsp rice vinegar
1 tbsp chili garlic sauce (or sambal oelek)
1 tbsp brown sugar (adjust to taste)
1/2 cup beef or chicken broth (or water, in a pinch)
For the Noodles & Stir-Fry:
8–10 oz (225–280g) wheat noodles (lo mein, udon, or ramen style)
2 tbsp vegetable oil (divided)
6 cloves garlic, minced
1-inch piece of ginger, minced
1 red chili, thinly sliced (optional, for extra heat)
1 red bell pepper, sliced
1 cup shredded carrots or julienned
3 scallions, cut into 1-inch pieces
Sesame seeds and chopped scallions (for garnish)
🔪 Instructions:
- Marinate the Beef
In a medium bowl, combine the sliced beef with soy sauce, cornstarch, sesame oil, and black pepper. Mix well and let it marinate for at least 15 minutes while you prepare the other ingredients. - Mix the Sauce
In a small bowl or measuring cup, whisk together all the sauce ingredients: soy sauces, oyster sauce, rice vinegar, chili garlic sauce, brown sugar, and broth. Set aside. - Cook the Noodles
Cook the noodles according to the package directions. Drain, rinse with cold water, and set aside. Toss with a tiny bit of oil to prevent sticking. - Sear the Beef
Heat 1 tablespoon of vegetable oil in a large skillet or wok over high heat. Add the marinated beef in a single layer (in batches if needed) and sear for 1–2 minutes on each side until browned and just cooked through. Remove and set aside. - Sauté the Aromatics
In the same pan, add the remaining tablespoon of oil. Add minced garlic, ginger, and sliced chili (if using). Stir-fry for about 30 seconds until fragrant. - Add the Veggies
Add bell peppers, carrots, and scallions. Stir-fry for 2–3 minutes until just tender-crisp. - Combine Everything
Return the cooked beef to the pan. Add the cooked noodles and pour in the sauce. Toss everything together over medium-high heat until evenly coated and heated through, about 2–3 minutes. - Garnish & Serve
Serve hot, topped with sesame seeds and chopped scallions. Add a squeeze of lime or an extra drizzle of chili oil for more brightness and heat, if desired.
