Stuffed Jumbo Pasta Shells

Ingredients
20 jumbo pasta shells
1 lb (450 g) ground beef
2 cups pasta sauce, divided
1 small onion, finely diced
2 cloves garlic, minced
1 teaspoon Italian seasoning
½ teaspoon salt
½ teaspoon black pepper
1 cup ricotta cheese
1½ cups shredded mozzarella cheese, divided
½ cup grated Parmesan cheese
1 large egg
2 tablespoons chopped fresh parsley (plus extra for garnish)
Instructions
Preheat your oven to 375°F (190°C).
Cook the jumbo pasta shells according to the package directions until al dente. Drain, rinse with cool water, and set aside.
In a large skillet over medium heat, cook the ground beef and onion until the beef is browned. Drain any excess grease.
Add the garlic, Italian seasoning, salt, and black pepper. Cook for 1 minute more.
In a large bowl, combine the ricotta, 1 cup mozzarella, Parmesan, egg, parsley, and the cooked beef mixture. Mix until well combined.
Spread 1 cup of the pasta sauce evenly over the bottom of a 9×13-inch baking dish.
Fill each cooked shell with the beef and cheese mixture and place them in the baking dish.
Spoon the remaining 1 cup of pasta sauce over the stuffed shells.
Sprinkle the remaining ½ cup of mozzarella cheese over the top.
Cover with foil and bake for 25 minutes.
Remove the foil and bake for another 10 minutes, or until the cheese is melted, bubbly, and lightly golden.
Garnish with fresh parsley and serve hot.
