Crispy Fried Shrimp
Ingredients
1 lb (450 g) large shrimp, peeled and deveined (tails on or off)
1 cup all-purpose flour
1 cup buttermilk (or 2 beaten eggs)
1 cup panko breadcrumbs
½ cup cornmeal (optional, for extra crunch)
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
½ teaspoon cayenne pepper (optional)
1 teaspoon salt
½ teaspoon black pepper
Vegetable or canola oil, for frying
Lemon wedges, for serving
Chopped fresh parsley, for garnish (optional)
Instructions
Pat the shrimp dry with paper towels.
In one shallow bowl, mix the flour with half of the salt, pepper, garlic powder, onion powder, and paprika.
Pour the buttermilk into a second bowl (or use beaten eggs).
In a third bowl, combine the panko breadcrumbs, cornmeal (if using), remaining seasonings, and cayenne pepper.
Dredge each shrimp in the seasoned flour, dip into the buttermilk, then coat well in the breadcrumb mixture.
Heat 2–3 inches of oil in a deep skillet or pot to 350°F (175°C).
Fry the shrimp in small batches for 2–3 minutes per side, or until golden brown and cooked through.
Remove with a slotted spoon and drain on a paper towel-lined plate.
