Grilled Chicken Salad with Tzatziki Sauce
Fresh, flavorful, and packed with protein, this grilled chicken salad is topped with a creamy homemade tzatziki sauce for a healthy and satisfying meal.
Ingredients
For the Salad:
1 grilled chicken breast, sliced
4 cups romaine lettuce or mixed greens
1 cup cherry tomatoes, halved
1 cucumber, sliced
¼ red onion, thinly sliced
2 tablespoons fresh dill, chopped
For the Tzatziki Sauce:
1 cup plain Greek yogurt
½ cucumber, grated and squeezed dry
1 clove garlic, minced
1 tablespoon olive oil
1 tablespoon fresh lemon juice
1 tablespoon fresh dill, chopped
Salt and black pepper, to taste
Instructions
Prepare the chicken: Grill the chicken breast over medium-high heat for 6–7 minutes per side, or until the internal temperature reaches 165°F (74°C). Let it rest for 5 minutes before slicing.
Make the tzatziki: In a medium bowl, combine the Greek yogurt, grated cucumber, garlic, olive oil, lemon juice, chopped dill, salt, and pepper. Stir until smooth. Cover and refrigerate for at least 15–30 minutes to allow the flavors to blend.
Assemble the salad: Arrange the romaine or mixed greens in a large serving bowl. Top with the cherry tomatoes, sliced cucumber, red onion, and fresh dill.
Add the chicken: Place the sliced grilled chicken over the salad.
Serve: Add a generous dollop of tzatziki on top or serve it on the side as a creamy dressing. Garnish with extra fresh dill and a squeeze of lemon if desired.
