Classic Golden Crepes with Honey Drizzle

Ingredients
For the Crepes:
1 cup all-purpose flour
2 large eggs
1¼ cups milk
2 tablespoons melted unsalted butter (plus more for the pan)
1 tablespoon granulated sugar
1 teaspoon vanilla extract
¼ teaspoon salt
For the Honey Drizzle:
¼ cup honey
1 tablespoon butter
1 teaspoon lemon juice (optional)

Fresh berries
Powdered sugar
Sliced bananas
Chopped nuts
Whipped cream
Instructions
In a large bowl, whisk together the flour, sugar, and salt.
Add the eggs, milk, melted butter, and vanilla. Whisk until the batter is smooth and free of lumps.
Let the batter rest for 20–30 minutes for tender crepes.
Heat a lightly buttered nonstick skillet or crepe pan over medium heat.
Pour about ¼ cup of batter into the pan, swirling immediately to coat the bottom evenly.
Cook for 1–2 minutes, until the edges begin to lift and the underside is lightly golden.
Flip carefully and cook for another 30–60 seconds.
Repeat with the remaining batter, lightly buttering the pan as needed.
In a small saucepan or microwave-safe bowl, warm the honey with the butter until smooth. Stir in the lemon juice if using.
Fold or roll the warm crepes, drizzle generously with the honey sauce, and garnish with your favorite toppings.
Tips
For extra-thin crepes, add 1–2 tablespoons of milk if the batter seems too thick.
Keep cooked crepes warm by stacking them on a plate and covering with a clean kitchen towel.
Fill with Nutella, fruit preserves, sweetened cream cheese, or fresh fruit for delicious variations.
