Ingredients
1 cup (225 g) low-fat cottage cheese
1 cup (225 g) plain nonfat Greek yogurt
1 scoop (25–30 g) vanilla protein powder
1 cup fresh strawberries, hulled (plus extra for garnish)
2–3 tbsp sugar-free powdered sweetener or honey, to taste
1 tsp vanilla extract
1 tsp fresh lemon juice
4 oz (115 g) light cream cheese, softened
Crushed graham crackers or low-carb cookie crumbs (optional, for topping)
Instructions
Add the cottage cheese, Greek yogurt, cream cheese, protein powder, sweetener, vanilla, and lemon juice to a blender or food processor.
Blend until completely smooth and creamy.
Add the strawberries and pulse a few times, or blend fully if you prefer a smooth pink fluff.
Taste and adjust the sweetness if needed.
Spoon into serving bowls or glasses and refrigerate for at least 30 minutes for the best texture.
Garnish with sliced strawberries and, if desired, a sprinkle of crushed graham crackers or low-carb cookie crumbs before serving.
Tips
For a thicker, mousse-like texture, chill for 1–2 hours.
