🥩🧄 Steak Bites with Garlic Butter
Ingredients
For the marinade:
- 1½ lbs (680 g) sirloin steak or ribeye, cut into 1-inch cubes
- ½ cup soy sauce
- ⅓ cup olive oil
- ¼ cup Worcestershire sauce
- 1 tsp minced garlic
- 1 tsp Dijon mustard
- 1 tsp Italian seasoning
- ½ tsp black pepper
- ½ tsp onion powder
For the garlic butter:
- 4 tbsp unsalted butter
- 4 cloves garlic, finely minced
- 1 tbsp fresh chopped parsley
- ½ tsp red pepper flakes, optional
- Pinch of black pepper
Instructions
- Prepare the steak: Cut the steak into bite-sized pieces, about 1 inch each. Pat them dry with paper towels.
- Make the marinade: In a bowl, whisk together soy sauce, olive oil, Worcestershire sauce, minced garlic, Dijon mustard, Italian seasoning, black pepper, and onion powder.
- Marinate: Add the steak pieces and toss until well coated. Cover and refrigerate for 30 minutes to 2 hours. Don’t marinate much longer because the soy sauce can make the exterior overly salty.
- Heat the pan: Remove the steak from the marinade and lightly pat it dry. Heat a large cast-iron skillet or heavy pan over high heat. Add a small amount of oil if needed.
- Sear the steak: Add the steak pieces in a single layer, working in batches if necessary. Sear for about 2–3 minutes per side, depending on your preferred doneness. Avoid overcrowding the pan so the steak browns instead of steams.
- Make the garlic butter: Reduce the heat to medium-low. Add the butter and minced garlic to the skillet. Cook for 30–60 seconds, stirring constantly so the garlic doesn’t burn.
- Coat the steak: Toss the steak bites in the garlic butter for another 1–2 minutes, allowing the butter and garlic to coat every piece.
- Finish: Remove from the heat. Sprinkle with fresh parsley and red pepper flakes, if using.
- Serve: Serve immediately with the garlic butter spooned over the top.

⭐ Pro Tip
For beautifully browned steak bites, make sure the skillet is very hot and don’t overcrowd it. Sear in batches if necessary, then combine everything with the garlic butter at the end.
