Best Never-Fail Fruit Cake

Makes: 1 large 9-inch round cake or 2 loaf cakes
Prep time: 25 minutes + soaking
Bake time: 1½–2 hours

🛒 Ingredients

Fruit Mixture

  • 3 cups mixed dried fruit (raisins, currants, chopped dates, dried cherries, cranberries, or candied fruit)
  • 1 cup chopped candied cherries
  • ½ cup chopped candied orange or lemon peel
  • 1 cup orange juice or apple juice
  • ½ cup brandy, rum, or additional orange juice

Cake Batter

  • 1 cup (225 g) unsalted butter, softened
  • 1 cup (200 g) packed brown sugar
  • ½ cup (100 g) granulated sugar
  • 4 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 2½ cups (315 g) all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • ½ teaspoon ground allspice
  • ½ teaspoon salt
  • ½ cup (120 ml) buttermilk
  • 1 cup chopped walnuts or pecans

Optional Finish

  • ¼ cup brandy or rum for brushing
  • Powdered sugar for dusting

👩‍🍳 Instructions

1. Soak the fruit

Place the dried fruit, candied cherries, and citrus peel in a bowl.

Pour over the orange juice and brandy or rum. Stir well, cover, and let sit for at least 2 hours. For the best flavor, refrigerate overnight.

Bring the fruit back to room temperature before making the cake.

2. Prepare the pan

Preheat the oven to 300°F (150°C).

Grease a 9-inch round cake pan or two loaf pans. Line the bottom and sides with parchment paper.

3. Make the batter

In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 3–4 minutes.

Beat in the eggs one at a time, mixing well after each addition.

Stir in the vanilla.

4. Combine the dry ingredients

In another bowl, whisk together:

  • Flour
  • Baking powder
  • Baking soda
  • Cinnamon
  • Nutmeg
  • Allspice
  • Salt

5. Finish the batter

Add the dry ingredients to the butter mixture in three additions, alternating with the buttermilk. Mix just until combined.

Fold in the soaked fruit and any remaining soaking liquid, followed by the chopped nuts.

Do not overmix.

6. Bake

Spoon the batter into the prepared pan and smooth the top.

Bake at 300°F (150°C) for approximately:

  • 1½–2 hours for a 9-inch round cake
  • 1¼–1¾ hours for loaf pans

The cake is done when a toothpick inserted into the center comes out with a few moist crumbs but no wet batter.

If the top begins browning too quickly, loosely cover it with foil during the final portion of baking.

7. Cool

Allow the cake to cool in the pan for 20–30 minutes.

Remove it from the pan and place it on a wire rack to cool completely.

8. Optional traditional finish

While the cake is still slightly warm, brush the top with 1–2 tablespoons of brandy or rum.

For a non-alcoholic version, brush with orange juice or apple juice instead.

Wrap the completely cooled cake tightly in parchment paper and then foil.

For the best flavor and texture, let it rest for 24–48 hours before slicing.

⭐ Never-Fail Tips

  • Don’t skip soaking the fruit—it keeps the cake moist and flavorful.
  • Bring eggs, butter, and buttermilk to room temperature before mixing.
  • Don’t pack too much fruit into the batter; the measurements above provide a good fruit-to-cake balance.
  • Bake at a low temperature to prevent a burnt exterior and undercooked center.
  • Let the cake cool completely before slicing for clean pieces.
  • Store tightly wrapped at room temperature for several days or refrigerate for longer storage.

🍊 Easy Non-Alcoholic Version

Simply replace the brandy or rum with orange juice, apple juice, or strong black tea. The cake will still be moist, fruity, and delicious.
