Crockpot Ranch Pork Chops and Potatoes 🍖🥔
Ingredients
4 boneless or bone-in pork chops
1½–2 lbs baby potatoes, halved
1 packet (1 oz) ranch seasoning mix
1 can (10.5 oz) cream of chicken soup
½ cup chicken broth
½ cup sour cream
2 tbsp butter
1 tsp garlic powder
½ tsp onion powder
½ tsp black pepper
½ cup shredded cheddar cheese, optional
Fresh parsley, for garnish
Instructions
Prepare the potatoes: Wash and halve the baby potatoes. Place them in the bottom of a 6-quart slow cooker.
Season the pork: Pat the pork chops dry and season both sides with garlic powder, onion powder, and black pepper.
Make the ranch sauce: In a bowl, whisk together the cream of chicken soup, chicken broth, sour cream, and ranch seasoning until smooth.
Layer everything: Place the pork chops over the potatoes. Pour the ranch mixture evenly over the pork and potatoes. Dot the top with butter.
Slow cook: Cover and cook on LOW for 5–6 hours or HIGH for 2½–3½ hours, until the pork reaches 145°F/63°C internally and the potatoes are tender.
Add cheese: If using cheddar, sprinkle it over everything during the final 10–15 minutes of cooking. Cover until melted.
Serve: Garnish with fresh parsley and spoon plenty of the creamy ranch sauce over the pork and potatoes.
💡 Tip
For extra flavor, quickly sear the pork chops in a hot skillet for 2–3 minutes per side before adding them to the crockpot. This gives them a delicious browned exterior.
