🥟 Easy Dumpling Soup 🍲
A cozy, comforting soup with tender vegetables, flavorful broth, and soft homemade dumplings. It’s simple enough for a weeknight dinner!
🛒 Ingredients
For the Soup
1 tablespoon olive oil or butter
1 small onion, diced
2 carrots, peeled and sliced
2 celery stalks, sliced
2 cloves garlic, minced
6 cups chicken broth
1 teaspoon dried parsley
½ teaspoon dried thyme
½ teaspoon black pepper
½ teaspoon salt, or to taste
2 cups cooked shredded chicken
1 cup frozen peas
For the Dumplings
1½ cups all-purpose flour
2 teaspoons baking powder
½ teaspoon salt
¾ cup milk
3 tablespoons melted butter
1 tablespoon chopped fresh parsley, optional

Sauté the vegetables:
Heat the oil or butter in a large soup pot over medium heat. Add the onion, carrots, and celery. Cook for 5–6 minutes, until the vegetables begin to soften.
Add garlic:
Stir in the minced garlic and cook for about 30 seconds.
Make the broth:
Pour in the chicken broth. Add parsley, thyme, salt, and pepper. Bring to a gentle boil.
Add chicken:
Stir in the shredded chicken and frozen peas. Reduce the heat and let the soup simmer while you prepare the dumplings.
Make the dumpling dough:
In a bowl, whisk together flour, baking powder, and salt. Add the milk and melted butter. Stir just until a soft dough forms. Don’t overmix.
Drop in the dumplings:
Using a spoon, drop small portions of dough directly into the gently simmering soup. Leave a little space between each dumpling because they will expand.
Cover and cook:
Cover the pot and simmer gently for 15 minutes. Do not lift the lid during the first 15 minutes, as the steam helps the dumplings cook properly.
Check the dumplings:
Remove the lid and check one dumpling by cutting it in half. It should be fluffy and cooked through in the center.
Finish:
Taste the soup and adjust the salt and pepper. Sprinkle with fresh parsley if desired.

Serve hot with crusty bread or a simple green salad. For an extra creamy version, stir ½ cup of heavy cream into the soup during the final few minutes of cooking.
