🐷 Slow Cooker Pulled Pork

🛒 Ingredients
3–4 lb (1.4–1.8 kg) boneless pork shoulder or pork butt
1 large onion, sliced
4 cloves garlic, minced
1 cup barbecue sauce, plus extra for serving
1/2 cup chicken broth
2 tbsp brown sugar
1 tbsp yellow or Dijon mustard
1 tbsp Worcestershire sauce
2 tsp smoked paprika
1 tsp chili powder
1 tsp garlic powder
1 tsp onion powder
1 tsp salt
1/2 tsp black pepper
1/2 tsp cumin
1 tbsp olive oil
1 tbsp apple cider vinegar
👩🍳 Instructions
Prepare the pork: Pat the pork shoulder dry. In a small bowl, combine brown sugar, smoked paprika, chili powder, garlic powder, onion powder, salt, pepper, and cumin. Rub the seasoning all over the pork.
Sear (optional): Heat olive oil in a large skillet over medium-high heat. Sear the pork for 2–3 minutes per side until browned. This adds extra flavor.
Load the slow cooker: Place sliced onions and minced garlic in the bottom of the slow cooker. Put the seasoned pork on top.
Make the sauce: Whisk together barbecue sauce, chicken broth, mustard, Worcestershire sauce, and apple cider vinegar. Pour over the pork.
Slow cook: Cover and cook on LOW for 8–10 hours or HIGH for 4–6 hours, until the pork is very tender and easily pulls apart with a fork.
Shred: Transfer the pork to a large bowl and shred it with two forks. Remove any large pieces of excess fat.
Finish: Return the shredded pork to the slow cooker and stir it into the juices. Add more barbecue sauce if desired. Let it cook uncovered for another 15–20 minutes.
🍽️ How to Serve
Pile the pulled pork onto toasted hamburger buns and top with coleslaw and extra BBQ sauce. It’s also delicious served over baked potatoes, mac and cheese, or rice.
