Creamy burrata baked with juicy roasted cherry tomatoes, garlic, olive oil, and herbs. Serve it warm with crusty bread or crostini for an easy appetizer.
🛒 Ingredients
2 cups cherry tomatoes
1 ball burrata cheese, 8 oz (225 g)
2 cloves garlic, minced
2 tbsp olive oil
½ tsp salt
¼ tsp black pepper
Pinch of red pepper flakes
2 tbsp fresh basil, thinly sliced
1 tbsp fresh parsley, chopped
Crusty bread or crostini, for serving

Preheat the oven:
Preheat oven to 400°F (200°C).
Prepare the tomatoes:
Place the cherry tomatoes in a small baking dish. Add the minced garlic, olive oil, salt, black pepper, and red pepper flakes. Toss everything together until the tomatoes are well coated.
Roast:
Bake for 15–20 minutes, until the tomatoes begin to blister and soften and their juices start to release.
Add the burrata:
Carefully remove the dish from the oven. Place the burrata in the center of the roasted tomatoes. Drizzle the burrata with a little extra olive oil if desired.
Bake again:
Return to the oven and bake for 5–7 minutes, just until the burrata is warmed through and beginning to soften. Avoid overbaking so the creamy center stays luscious.
Garnish:
Remove from the oven and sprinkle with fresh basil and parsley. Add another pinch of black pepper or red pepper flakes if desired.
Serve:
Serve immediately with warm crusty bread or crostini. Spoon the creamy burrata together with the roasted tomatoes onto the bread.
💡 Tips
Use room-temperature burrata for more even warming.
For extra flavor, add a drizzle of balsamic glaze before serving.
A little grated Parmesan or freshly grated lemon zest also works beautifully.
Don’t bake the burrata too long—the goal is warm and soft, not fully melted.
