A hearty, creamy, cheesy casserole made with seasoned ground beef, tender potatoes, and plenty of melted cheese. Perfect for an easy family dinner!
🛒 Ingredients
1 lb (450 g) ground beef
4–5 medium russet or Yukon Gold potatoes, thinly sliced
1 small onion, diced
2 cloves garlic, minced
1 can (10.5 oz) condensed cream of mushroom soup
½ cup sour cream
½ cup milk
1 tsp salt
½ tsp black pepper
1 tsp paprika
½ tsp onion powder
2 cups shredded cheddar cheese, divided
1 tbsp olive oil
2 tbsp chopped fresh parsley, optional

Prepare the oven:
Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
Cook the beef:
Heat olive oil in a large skillet over medium-high heat. Add the diced onion and ground beef. Cook for 6–8 minutes, breaking the beef apart, until browned. Drain excess grease.
Season:
Add garlic, salt, pepper, paprika, and onion powder. Cook for another 1 minute.
Make the sauce:
In a bowl, whisk together the cream of mushroom soup, sour cream, and milk until smooth.
Layer the casserole:
Arrange half of the sliced potatoes in the prepared baking dish. Sprinkle with half of the cooked beef mixture and about ½ cup cheese. Pour over half of the soup mixture.
Repeat:
Add the remaining potatoes, beef, soup mixture, and another ½ cup cheese.
Bake covered:
Cover tightly with aluminum foil and bake for 45 minutes.
Add the cheese:
Remove the foil and sprinkle the remaining 1 cup cheddar cheese evenly over the top.
Finish baking:
Return to the oven uncovered for 15–20 minutes, until the potatoes are tender and the cheese is melted, bubbly, and lightly golden.
Rest and serve:
Let the casserole rest for 5–10 minutes. Garnish with parsley if desired and serve hot.

Slice the potatoes very thinly and evenly so they cook at the same rate.
For extra flavor, use a combination of cheddar and Monterey Jack.
Add diced bell peppers, mushrooms, or frozen peas for extra vegetables.
For a crispy topping, sprinkle ½ cup crushed buttery crackers over the cheese during the final 15 minutes.
