A hearty, comforting Sunday meal made low and slow with tender beef, potatoes, vegetables, and rich savory gravy.
🛒 Ingredients
2½–3 lbs beef chuck roast, cut into large chunks
2 lbs potatoes, peeled and cut into chunks
1 large onion, sliced
3 carrots, peeled and cut into pieces
3 cloves garlic, minced
1½ cups beef broth
1 packet onion soup mix
1 tbsp Worcestershire sauce
1 tsp salt
½ tsp black pepper
1 tsp dried thyme
2 tbsp olive oil

Brown the beef: Heat olive oil in a large skillet over medium-high heat. Season the beef with salt and pepper and brown on all sides, about 2–3 minutes per side. This step adds extra flavor but can be skipped if you’re short on time.
Layer the slow cooker: Place the potatoes, carrots, and onion in the bottom of a 6-quart slow cooker. Add the browned beef and garlic on top.
Make the sauce: Whisk together the beef broth, onion soup mix, Worcestershire sauce, and thyme. Pour evenly over everything.
Cook: Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours, until the beef is fork-tender and the potatoes are cooked through.
Finish: Taste the gravy and adjust the salt and pepper if needed.
Serve: Spoon the tender beef and vegetables onto a large serving platter and drizzle generously with the savory gravy.
🍽️ Sunday Feast Tip
For an extra-thick gravy, remove the meat and vegetables at the end. Mix 2 tbsp cornstarch with 2 tbsp cold water, stir it into the cooking liquid, and cook on HIGH for about 10–15 minutes, until thickened.
