Bright, creamy, and comforting, this coconut lime cod soup comes together quickly with tender fish, creamy coconut milk, fresh ginger, garlic, and plenty of zesty lime.
Ingredients
- 1 lb cod or haddock fillets, cut into bite-size chunks
- 1 tbsp olive oil or butter
- ½ medium onion, diced
- 2 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1 (13.5 oz) can full-fat coconut milk
- 2 cups fish broth or chicken broth
- Zest of 2 limes
- Juice of 2 limes
- 1 tbsp fish sauce, optional but recommended
- ½ tsp salt, plus more to taste
- ¼ tsp black pepper
- ¼ tsp red pepper flakes, optional
- Fresh cilantro, chopped, for garnish
- Lime slices, for serving
Instructions
- Sauté the aromatics: Heat the olive oil or butter in a large pot over medium heat. Add the diced onion and cook for 3–4 minutes, until softened.
- Add garlic and ginger: Stir in the minced garlic and grated ginger. Cook for about 30–60 seconds, just until fragrant. If using red pepper flakes, add them now.
- Build the broth: Pour in the coconut milk and broth. Add the lime zest and fish sauce. Stir well and bring the soup to a gentle simmer.
- Simmer: Reduce the heat to medium-low and simmer uncovered for 5–7 minutes, allowing the flavors to come together. Do not boil aggressively, as coconut milk can separate.
- Add the fish: Gently add the cod chunks to the simmering soup. Cook for 5–7 minutes, or until the fish is opaque and flakes easily with a fork. Avoid stirring too much so the fish doesn’t break apart.
- Finish with lime: Remove the pot from the heat. Stir in the fresh lime juice and season with salt and black pepper to taste.
- Garnish and serve: Ladle the soup into bowls and top with fresh cilantro and lime slices. Add an extra pinch of red pepper flakes if you like some heat.
