π₯ Spinach, Mushroom & Avocado Loaded Stuffed Sweet Potatoes

π Ingredients
For the sweet potatoes
4 medium sweet potatoes
1 tablespoon olive oil
Β½ teaspoon salt
ΒΌ teaspoon black pepper
For the spinach & mushroom filling
1 tablespoon olive oil
8 oz (225 g) mushrooms, sliced
2 cloves garlic, minced
Β½ small onion, finely diced
4 cups fresh spinach
Β½ teaspoon smoked paprika
ΒΌ teaspoon red pepper flakes, optional
Salt and black pepper, to taste
Β½ cup shredded mozzarella or cheddar cheese, optional
For topping
1 large ripe avocado, diced
2 tablespoons fresh cilantro or parsley, chopped
2 tablespoons crumbled feta cheese, optional
Juice of Β½ lime
A drizzle of hot sauce, optional
π©βπ³ Instructions
Bake the sweet potatoes:
Preheat oven to 400Β°F (200Β°C). Wash and dry the sweet potatoes, then pierce each several times with a fork. Rub with olive oil, salt, and pepper.
Place on a baking sheet and bake for 45β60 minutes, or until completely tender when pierced with a knife.
Prepare the filling:
While the potatoes bake, heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the onion and mushrooms. Cook for 5β7 minutes, stirring occasionally, until the mushrooms are browned and their moisture has evaporated.
Add the garlic, smoked paprika, and red pepper flakes. Cook for 30β60 seconds.
Add the spinach a handful at a time. Cook for 2β3 minutes, until wilted. Season with salt and black pepper.
Stuff the potatoes:
Remove the sweet potatoes from the oven and let them cool for a few minutes. Slice each potato lengthwise, being careful not to cut all the way through.
Gently fluff the inside with a fork. Divide the spinach and mushroom mixture among the potatoes. Sprinkle with cheese if using.
Return to the oven for 3β5 minutes, just until the cheese melts.
Add the avocado:
Top each potato with diced avocado, feta, cilantro or parsley, and a squeeze of fresh lime juice.
Finish with hot sauce if desired and serve immediately.
