Spring Pea & Burrata Crostini with Lemon Zest & Honey
Ingredients:
For the Crostini:
1 baguette, sliced into ½-inch pieces
2 tbsp olive oil
1 garlic clove, halved
For the Topping:
1 cup fresh or frozen peas, blanched
1/4 cup fresh mint leaves
1 tbsp lemon juice
1/2 tsp salt
1/4 tsp black pepper
8 oz burrata cheese, torn into pieces
1 tbsp honey
Zest of 1 lemon
For Garnish:
Extra mint leaves
Crushed red pepper flakes (optional)
Directions:
Preheat oven to 375°F (190°C). Arrange baguette slices on a baking sheet and brush both sides with olive oil. Bake for 8-10 minutes, flipping halfway through, until golden and crisp. Rub each slice with the cut side of a garlic clove.
In a food processor, blend peas, mint, lemon juice, salt, and black pepper until slightly chunky.
Spread a generous amount of burrata on each crostini. Top with the pea mixture.
Drizzle with honey and sprinkle with lemon zest.
Garnish with extra mint leaves and a pinch of red pepper flakes if desired.
Serve immediately and enjoy this fresh, vibrant appetizer!
