Balsamic Chicken with Roasted Veggies Recipe

Ingredients:
- 2 large chicken breasts, cut into chunks
- 1 cup cherry tomatoes
- 1 medium zucchini, sliced
- ½ cup mozzarella cheese, shredded
- 2 tbsp balsamic vinegar
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh basil leaves, chopped (optional)
Instructions:
- Preheat the Oven: Preheat the oven to 425°F (220°C).
- Prepare the Chicken: In a large bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper. Add the chicken chunks and toss to coat.
- Prepare the Veggies: In a separate bowl, toss the cherry tomatoes and sliced zucchini with a little bit of olive oil, salt, and pepper.
