This Banana Bread Cake takes all the comforting flavors of classic banana bread and elevates them with a rich, tangy cream cheese frosting. Perfect for any occasion!


Ingredients

For the Banana Bread Cake:

  • 1 ½ cups mashed ripe bananas (about 3-4 bananas)
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon cinnamon (optional)
  • ½ cup unsalted butter, softened
  • ¾ cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup sour cream or plain yogurt

For the Cream Cheese Frosting:

  • 8 oz cream cheese, softened (about 225g)
  • ¼ cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 1 ½ to 2 cups powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a 9×13 inch baking pan with butter and lightly flour it.
  3. In a bowl, whisk together the flour, baking soda, salt, and cinnamon.
  4. In another bowl, beat the butter and brown sugar until light and fluffy.
    Add the eggs one at a time, then mix in the mashed bananas, vanilla, and sour cream.
  5. Add the dry ingredients to the wet and stir until just combined—don’t overmix.
  6. Pour the batter into the prepared pan and bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
  7. Let the cake cool completely before applying the frosting.

To Make the Frosting:

  1. Beat the cream cheese and butter together until smooth.
  2. Add vanilla extract, then gradually add the powdered sugar until the frosting is smooth and spreadable.
  3. Spread the frosting evenly over the cooled cake.
