Marinated Cucumber, Onion, and Tomato Salad
A refreshing, tangy salad made with crisp cucumbers, juicy tomatoes, and sweet onions in a flavorful vinaigrette. It’s the perfect side dish for barbecues, grilled meats, or summer meals.
Ingredients
Salad
2 large cucumbers, thinly sliced
3 large tomatoes, cut into wedges or chunks
1 medium red onion, thinly sliced
2 tablespoons chopped fresh parsley or dill (optional)
Marinade
½ cup (120 ml) apple cider vinegar or red wine vinegar
¼ cup (60 ml) olive oil
2 tablespoons granulated sugar or honey
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon dried oregano or Italian seasoning
Instructions
In a large bowl, combine the cucumbers, tomatoes, red onion, and fresh herbs.
In a separate bowl or jar, whisk together the vinegar, olive oil, sugar (or honey), salt, pepper, garlic powder, and oregano until well combined.
Pour the marinade over the vegetables and toss gently to coat.
Cover and refrigerate for at least 1 hour, stirring once or twice so the vegetables absorb the flavors.
Serve chilled with a slotted spoon to drain excess marinade if desired.
Tips
For the best flavor, let the salad marinate for 2–4 hours.
Add sliced bell peppers, feta cheese, or avocado for extra variety.
Store in the refrigerator for up to 3 days. The vegetables will soften slightly as they marinate.
