Ingredients
2 ripe mangoes, peeled and diced
2 ripe avocados, diced
2 cups arugula or mixed greens
¼ red onion, thinly sliced
2 tablespoons fresh cilantro, chopped
1 tablespoon olive oil
1 tablespoon fresh lime juice
½ teaspoon chili flakes (adjust to taste)
Salt and freshly ground black pepper, to taste

½ cucumber, diced
1 cup cherry tomatoes, halved
¼ cup crumbled feta cheese
¼ cup toasted pumpkin seeds or sliced almonds
Grilled shrimp or chicken for added protein
Instructions
In a large salad bowl, combine the arugula (or mixed greens), diced mangoes, diced avocados, red onion, and chopped cilantro.
In a small bowl, whisk together the olive oil, lime juice, chili flakes, salt, and black pepper until well combined.
Pour the dressing over the salad just before serving.
Gently toss everything together, being careful not to mash the avocado.
Taste and adjust the seasoning with additional lime juice, salt, or chili flakes if desired.
Serve immediately for the freshest flavor and texture.
