Ingredients
2 slices white sandwich bread
1 large ripe tomato, sliced
2 tablespoons mayonnaise
Salt, to taste
Freshly ground black pepper, to taste
Instructions
Wash and slice the tomato into ΒΌ-inch thick slices. Lightly sprinkle with salt and let sit for 5 minutes to draw out excess moisture. Pat dry with paper towels.
Toast the bread lightly if you prefer a bit of crunch, or leave it soft for a traditional sandwich.
Spread 1 tablespoon of mayonnaise evenly on each slice of bread.
Arrange the tomato slices in a single layer on one slice of bread.
Season the tomatoes with a little more salt and plenty of freshly ground black pepper.
Top with the second slice of bread, mayonnaise side down.
Slice in half and serve immediately.
Tips
Use the ripest, juiciest tomatoes you can find for the best flavor.
Add a few fresh basil leaves for a fresh twist.
For extra richness, sprinkle on a little shredded cheddar or mozzarella cheese.
