Slow Cooker BBQ Beef
Ingredients
2½–3 lb (1.1–1.4 kg) beef chuck roast
1 tablespoon olive oil (optional, for searing)
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
1 cup BBQ sauce (your favorite variety)
½ cup beef broth
2 tablespoons Worcestershire sauce
1 tablespoon brown sugar (optional, for a sweeter flavor)
1 small onion, sliced
3 cloves garlic, minced
Instructions
Season the beef: Pat the roast dry and season all sides with salt, pepper, garlic powder, onion powder, and smoked paprika.
Optional sear: Heat the olive oil in a skillet over medium-high heat and sear the roast for 2–3 minutes per side until browned.
Assemble: Place the sliced onion and garlic in the bottom of the slow cooker. Add the beef on top.
Make the sauce: In a bowl, whisk together the BBQ sauce, beef broth, Worcestershire sauce, and brown sugar.
Cook: Pour the sauce over the beef. Cover and cook on:
Low: 8–10 hours, or
High: 4–5 hours, until the beef is fork-tender.
Shred: Transfer the beef to a cutting board and shred it with two forks. Return it to the slow cooker and stir it into the sauce.
Rest: Let the shredded beef sit in the sauce for 10–15 minutes before serving.
Serving Ideas
Pile onto toasted hamburger buns for BBQ beef sandwiches.
Serve over mashed potatoes or rice.
Stuff into baked potatoes.
Use in tacos, wraps, or quesadillas.
Top with coleslaw and sliced pickles for extra crunch.
