Feta Chicken Salad
Ingredients
2 cups cooked chicken breast, diced or shredded
1 cup cucumber, diced
1 cup cherry tomatoes, halved
½ cup crumbled feta cheese
¼ cup red onion, finely sliced
¼ cup Kalamata olives, sliced (optional)
2 tablespoons fresh parsley, chopped
1 tablespoon fresh dill, chopped (optional)
Lemon Herb Dressing
3 tablespoons extra-virgin olive oil
2 tablespoons fresh lemon juice
1 teaspoon Dijon mustard
1 clove garlic, minced
1 teaspoon dried oregano
Salt, to taste
Freshly ground black pepper, to taste
Instructions
In a large bowl, combine the chicken, cucumber, cherry tomatoes, red onion, feta cheese, olives, parsley, and dill.
In a small bowl or jar, whisk together the olive oil, lemon juice, Dijon mustard, garlic, oregano, salt, and black pepper until well combined.
Pour the dressing over the salad and toss gently until everything is evenly coated.
Taste and adjust the seasoning if needed.
Chill for 15–20 minutes before serving for the best flavor.
