Flourless Flatbreads
These soft, flexible flatbreads are made without any flour and are perfect for wraps, dipping, or serving alongside soups and curries.
Ingredients:
1 cup rolled oats
1 cup cottage cheese
2 large eggs
½ teaspoon baking powder (optional, for a lighter texture)
½ teaspoon salt
½ teaspoon garlic powder (optional)
½ teaspoon dried herbs (optional)
Instructions:
Add the rolled oats to a blender and blend into a fine powder.
Add the cottage cheese, eggs, baking powder (if using), salt, and any optional seasonings.
Blend until the batter is completely smooth.
Let the batter rest for 5–10 minutes to thicken.
Heat a nonstick skillet or lightly greased griddle over medium-low heat.
Pour about ¼ cup of batter into the pan and spread it into a 6-inch circle.
Cook for 2–3 minutes, until the edges are set and the bottom is golden.
Carefully flip and cook for another 1–2 minutes.
Repeat with the remaining batter.
Serving Ideas:
Fill with grilled chicken, vegetables, or eggs for a wrap.
Serve with hummus, guacamole, or yogurt dip.
Top with avocado, smoked salmon, or your favorite sandwich fillings.
