Cabbage and Eggs Skillet
Ingredients
1 small head green cabbage, shredded (about 6 cups)
6 large eggs
2 tablespoons butter or olive oil
1 small onion, diced
2 cloves garlic, minced
1 teaspoon paprika
½ teaspoon dried oregano (optional)
Salt and black pepper, to taste
¼ teaspoon red pepper flakes (optional)
2 tablespoons chopped fresh parsley or green onions, for garnish
½ cup shredded cheddar or mozzarella cheese (optional)
Instructions
Heat the butter or olive oil in a large skillet over medium heat.
Add the onion and cook for 3–4 minutes until softened.
Stir in the garlic and cook for 30 seconds until fragrant.
Add the shredded cabbage, paprika, oregano, salt, pepper, and red pepper flakes. Cook for 10–12 minutes, stirring occasionally, until the cabbage is tender and lightly browned.
Beat the eggs in a bowl.
Push the cabbage to one side of the skillet and pour the eggs into the empty side. Gently scramble them, then mix them with the cabbage.
If using cheese, sprinkle it over the top, cover the skillet, and let it melt for 1–2 minutes.
Garnish with parsley or green onions and serve warm.

Serve with toast or crusty bread.
Add cooked bacon, sausage, or ham for extra protein.
Top with hot sauce or a dollop of sour cream for extra flavor.
