Ingredients
Cheesecake Dressing:
1 (8 oz) package cream cheese, softened
1 (3.4 oz) package instant cheesecake pudding mix (or vanilla pudding mix)
1 cup vanilla Greek yogurt or sour cream
1 cup whipped topping (Cool Whip), thawed
1 teaspoon vanilla extract
Fruit:
2 cups strawberries, sliced
1 cup blueberries
1 cup green grapes, halved
1 cup red grapes, halved
2 kiwis, peeled and sliced
1 cup pineapple chunks
2 mandarin oranges, drained (optional)
Instructions
In a large bowl, beat the softened cream cheese until smooth.
Add the cheesecake pudding mix, Greek yogurt (or sour cream), and vanilla extract. Beat until creamy.
Fold in the whipped topping until light and fluffy.
Gently add all the prepared fruit and fold until evenly coated with the cheesecake mixture.
Cover and refrigerate for at least 1 hour before serving to allow the flavors to blend.
Garnish with extra berries or a sprinkle of crushed graham crackers just before serving, if desired.
Tips
Avoid using bananas until just before serving, as they brown quickly.
Pat juicy fruits dry with paper towels to keep the salad thick and creamy.
Store leftovers in the refrigerator for up to 2 days.
