This hearty Crockpot Cowboy Soup is packed with ground beef, potatoes, beans, corn, and a rich tomato broth. It’s an easy, comforting meal that’s perfect for busy weeknights or feeding a crowd.
Ingredients
1 pound ground beef
1 small onion, diced
3 cloves garlic, minced
4 medium potatoes, peeled and diced
1 can (15 oz) kidney beans, drained and rinsed
1 can (15 oz) pinto beans, drained and rinsed
1 can (15 oz) corn, drained
1 can (14.5 oz) diced tomatoes, undrained
1 can (10 oz) diced tomatoes with green chilies (optional)
4 cups beef broth
2 tablespoons tomato paste
1 teaspoon chili powder
1 teaspoon smoked paprika
1 teaspoon ground cumin
1 teaspoon Italian seasoning
½ teaspoon black pepper
1 teaspoon salt (or to taste)

Shredded cheddar cheese
Sour cream
Chopped green onions
Fresh cilantro
Crushed tortilla chips
Instructions
In a large skillet over medium heat, cook the ground beef with the diced onion until the beef is browned. Drain any excess grease, then stir in the garlic and cook for 1 minute.
Transfer the beef mixture to the crockpot.
Add the potatoes, kidney beans, pinto beans, corn, diced tomatoes, diced tomatoes with green chilies (if using), beef broth, tomato paste, chili powder, smoked paprika, cumin, Italian seasoning, salt, and pepper.
Stir everything together until well combined.
Cover and cook on Low for 6–8 hours or on High for 3–4 hours, until the potatoes are tender.
Taste and adjust the seasoning if needed.
Ladle into bowls and top with shredded cheese, sour cream, green onions, cilantro, or crushed tortilla chips if desired.
