Cottage Cheese Flagels (High-Protein Flat Bagels)
These cottage cheese flagels are a delicious, protein-packed twist on traditional bagels. They’re crispy on the outside, soft and chewy in the middle, and perfect for breakfast, sandwiches, or snacks.
Ingredients
1 cup cottage cheese
1 cup self-rising flour (or 1 cup all-purpose flour + 1½ tsp baking powder + ¼ tsp salt)
1 egg, beaten (for egg wash)

Everything bagel seasoning
Sesame seeds
Poppy seeds
Shredded Parmesan cheese
Garlic powder

Instructions
Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
Blend the cottage cheese until smooth if you prefer a smoother dough.
In a mixing bowl, combine the cottage cheese and self-rising flour. Mix until a dough forms.
Turn the dough onto a lightly floured surface and knead for 1–2 minutes until smooth.
Divide the dough into 4 equal portions and flatten each into an oval or round shape about ½ inch thick.
Place the flagels on the prepared baking sheet.
Brush each with the beaten egg and sprinkle with your favorite toppings.
Bake for 25–30 minutes, or until golden brown and cooked through.
For an extra crispy top, broil for 1–2 minutes at the end, watching carefully to prevent burning.
Let cool for 5 minutes before serving.
Serving Ideas
Spread with cream cheese or butter.
Top with smashed avocado and a fried egg.
Fill with turkey, cheese, lettuce, and tomato for a high-protein sandwich.
