Sweet Alabama Pecanbread
Ingredients
2 cups all-purpose flour
1 cup granulated sugar
1 cup light brown sugar, packed
4 large eggs, beaten
1 cup vegetable oil
1 tsp vanilla extract
1/2 tsp salt
2 cups chopped pecans
1 cup shredded coconut (optional, for extra texture)
Instructions
Preheat your oven to 350°F (175°C). Grease and lightly flour a 9×13-inch baking dish.
In a large bowl, combine the flour, granulated sugar, brown sugar, and salt.
Stir in the beaten eggs, vegetable oil, and vanilla extract until just combined. Do not overmix.
Fold in the chopped pecans and, if using, the shredded coconut.
Pour the batter into the prepared baking dish and spread it evenly.
Bake for 30–35 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
Let cool in the pan for 15–20 minutes before slicing into squares.
Optional Butter Glaze
Ingredients
1/4 cup unsalted butter
1/4 cup brown sugar
2 tbsp heavy cream
1/2 tsp vanilla extract
Instructions
Melt the butter in a small saucepan over medium heat.
Stir in the brown sugar and cream. Simmer for 2–3 minutes until smooth.
Remove from the heat and stir in the vanilla.
Drizzle over the warm pecanbread before serving.
Serving Suggestions
Serve warm or at room temperature with:
A scoop of vanilla ice cream
Fresh whipped cream
A hot cup of coffee or tea
