🧄🧈 Slow Cooker Garlic Butter Chicken
Ingredients
- 4 boneless, skinless chicken breasts or 6 chicken thighs
- 4 tbsp unsalted butter, melted
- 6 cloves garlic, minced
- 1 cup chicken broth
- 1 tsp Italian seasoning
- 1 tsp paprika
- ½ tsp onion powder
- ½ tsp dried thyme
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp red pepper flakes, optional
- ½ cup heavy cream
- ½ cup grated Parmesan cheese
- 1 tbsp fresh chopped parsley
- 1 tbsp lemon juice
Instructions
- Season the chicken: Pat the chicken dry and season both sides with salt, pepper, paprika, onion powder, Italian seasoning, and thyme.
- Make the garlic butter: In a small bowl, combine melted butter with the minced garlic.
- Load the slow cooker: Place the chicken in the slow cooker. Pour the garlic butter over the chicken, followed by the chicken broth.
- Cook: Cover and cook on LOW for 3–4 hours or HIGH for 2–3 hours, until the chicken reaches an internal temperature of 165°F (74°C).
- Make it creamy: Remove the cooked chicken and set aside. Stir the heavy cream and Parmesan into the garlic-butter juices. Return the chicken to the slow cooker.
- Finish: Cover and cook on LOW for another 10–15 minutes, just until the sauce is warmed through and slightly thickened.
- Add freshness: Stir in the lemon juice and sprinkle with fresh parsley.
- Serve: Spoon plenty of the creamy garlic-butter sauce over the chicken.
