🍯🌿 Slow Cooker Honey Mustard Pork Chops
Ingredients
- 4 boneless pork chops, about ¾–1 inch thick
- ½ cup chicken broth
- ⅓ cup Dijon mustard
- ¼ cup honey
- 2 tbsp yellow mustard
- 3 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp dried thyme
- ½ tsp paprika
- ½ tsp onion powder
- ½ tsp salt
- ½ tsp black pepper
- ½ cup heavy cream, optional
- 1 tbsp cornstarch + 2 tbsp cold water, optional for thickening
- 1 tbsp fresh parsley, chopped
Instructions
- Season the pork: Pat the pork chops dry and season both sides with salt, pepper, paprika, onion powder, and thyme.
- Sear for extra flavor: Heat olive oil in a skillet over medium-high heat. Sear the pork chops for 1–2 minutes per side, just until golden brown. Transfer them to the slow cooker.
- Make the honey mustard sauce: Whisk together the chicken broth, Dijon mustard, yellow mustard, honey, and minced garlic.
- Slow cook: Pour the sauce over the pork chops. Cover and cook on LOW for 2½–3½ hours or HIGH for 1½–2 hours, until the pork reaches at least 145°F (63°C) internally.
- Make it creamy: If using heavy cream, remove the pork chops and stir the cream into the cooking liquid. For a thicker sauce, mix cornstarch with cold water and stir it in. Cover and cook on HIGH for 10–15 minutes, until thickened.
- Finish: Return the pork chops to the sauce and spoon the honey mustard sauce over them. Garnish with fresh parsley.

⭐ Tip
Don’t overcook pork chops in the slow cooker. Start checking the internal temperature early; once they reach 145°F (63°C), they are safe to eat and should rest for a few minutes before serving.
