A gorgeous roasted whole cabbage with crispy, caramelized edges, tender layers, garlic, Parmesan, and bright lemon butter.
Ingredients
1 medium green cabbage
4 tbsp unsalted butter, melted
4 cloves garlic, minced
1 tbsp fresh lemon juice
1 tsp lemon zest
½ tsp Italian seasoning
½ tsp smoked paprika
½ tsp salt
¼ tsp black pepper
½ cup grated Parmesan cheese
2 tbsp chopped fresh parsley
Lemon wedges, for serving
Instructions
Preheat the oven:
Heat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
Prepare the cabbage:
Remove any damaged outer leaves. Keep the cabbage whole and cut a small amount from the bottom so it sits flat. Make several deep cuts into the top, forming wedges, but don’t cut all the way through—you want the cabbage to remain intact.
Make the lemon butter:
Mix melted butter, minced garlic, lemon juice, lemon zest, Italian seasoning, smoked paprika, salt, and black pepper.
Season the cabbage:
Place the cabbage on the baking sheet. Brush the garlic-lemon butter generously over the entire cabbage, working some of it into the cuts.
Roast:
Cover loosely with foil and roast for 35–40 minutes.
Add Parmesan:
Remove the foil and brush with any remaining butter mixture. Sprinkle Parmesan generously over the top and into the cuts.
Finish roasting:
Return to the oven uncovered for another 20–30 minutes, until the cabbage is very tender and the edges are deeply golden and crispy. For extra browning, broil for 1–2 minutes, watching closely.
Garnish and serve:
Sprinkle with fresh parsley and a little extra Parmesan. Serve with lemon wedges for squeezing over the top.
