A cozy, creamy soup loaded with ground beef, vegetables, potatoes, and savory herbs—everything you love about shepherd’s pie in one bowl!
Ingredients
1 lb (450 g) ground beef or ground lamb
1 medium onion, diced
2 cloves garlic, minced
3 medium carrots, diced
2 celery stalks, diced
4 cups potatoes, peeled and cut into small cubes
4 cups beef broth
1 cup frozen peas
1 cup frozen corn
2 tbsp tomato paste
1 tsp Worcestershire sauce
1 tsp dried thyme
1 tsp dried rosemary
½ tsp smoked paprika
Salt and black pepper, to taste
½ cup heavy cream
2 tbsp butter
2 tbsp all-purpose flour
½ cup shredded cheddar cheese, optional
Fresh parsley, for garnish
Instructions
Brown the meat:
Heat a large pot over medium-high heat. Add the ground beef or lamb and cook until browned, breaking it apart as it cooks. Drain excess fat if needed.
Add the aromatics:
Add the onion, carrots, and celery. Cook for 5–6 minutes until the vegetables begin to soften. Stir in the garlic and cook for another 30 seconds.
Build the soup:
Stir in the tomato paste, Worcestershire sauce, thyme, rosemary, smoked paprika, salt, and pepper.
Add potatoes and broth:
Pour in the beef broth and add the potatoes. Bring to a boil, then reduce the heat and simmer uncovered for 15–20 minutes, or until the potatoes are tender.
Thicken it:
In a small saucepan, melt the butter over medium heat. Whisk in the flour and cook for about 1 minute. Gradually whisk in the heavy cream until smooth. Pour this mixture into the soup and stir well.
Add vegetables:
Stir in the frozen peas and corn. Simmer for another 5 minutes.
Finish:
Taste and adjust the salt and pepper. For an extra cheesy shepherd’s-pie flavor, stir in the shredded cheddar until melted.
Serve:
Ladle into bowls and garnish with fresh parsley. Serve hot with crusty bread or biscuits.

For an even thicker, heartier soup, mash a few of the cooked potatoes against the side of the pot before adding the cream mixture. This gives the soup a naturally creamy texture without making it overly heavy.
