🛒 Ingredients
For the meatloaf:
1½ lbs ground beef
1 small onion, finely diced
2 cloves garlic, minced
1 large egg
¾ cup breadcrumbs
½ cup milk
¼ cup ketchup
1 tbsp Worcestershire sauce
1 tsp salt
½ tsp black pepper
1 tsp smoked paprika
For the potatoes:
2 lbs potatoes, peeled and thinly sliced
2 tbsp butter
2 tbsp all-purpose flour
2 cups milk
1 cup shredded cheddar cheese
½ tsp garlic powder
½ tsp salt
¼ tsp black pepper
Topping:
1 cup shredded cheddar cheese
½ cup cooked bacon, crumbled
2 tbsp chopped green onions
¼ cup barbecue sauce
👩‍🍳 Instructions
Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
Make the meatloaf: In a large bowl, combine ground beef, onion, garlic, egg, breadcrumbs, milk, ketchup, Worcestershire sauce, salt, pepper, and smoked paprika. Mix gently until just combined.
Shape the mixture into a loaf and place it in the center of the baking dish.
Prepare the potatoes: Arrange the sliced potatoes around the meatloaf, slightly overlapping them.
Melt butter in a saucepan over medium heat. Whisk in flour and cook for about 1 minute. Gradually whisk in milk. Cook until thickened, then stir in 1 cup cheddar, garlic powder, salt, and pepper.
Pour the cheese sauce evenly over the potatoes.
Cover the dish with foil and bake for 45 minutes.
Remove the foil. Brush the meatloaf with barbecue sauce and sprinkle the potatoes with the remaining cheddar and bacon.
Bake uncovered for another 20–25 minutes, or until the meatloaf reaches 160°F (71°C) internally and the potatoes are tender.
Sprinkle with green onions and let rest for 10 minutes before slicing.
