🥕 Carrot Cake Roll with Cream Cheese Filling
A soft, spiced carrot cake rolled around a rich, tangy cream cheese filling. Perfect for Easter, holidays, or a special dessert!

For the Carrot Cake
3 large eggs
¾ cup granulated sugar
2 tbsp vegetable oil
1 tsp vanilla extract
¾ cup all-purpose flour
1 tsp baking powder
½ tsp baking soda
½ tsp ground cinnamon
¼ tsp ground nutmeg
¼ tsp salt
1 cup finely grated carrots
Powdered sugar, for rolling
For the Cream Cheese Filling
8 oz (225 g) cream cheese, softened
¼ cup unsalted butter, softened
1 cup powdered sugar
1 tsp vanilla extract

Prepare the pan: Preheat oven to 350°F (175°C). Line a 10×15-inch jelly-roll pan with parchment paper and lightly grease it.
Make the batter: Beat eggs and sugar for 3–4 minutes, until pale and fluffy. Beat in oil and vanilla.
In a separate bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
Gently fold the dry ingredients into the egg mixture. Fold in the grated carrots until evenly combined.
Bake: Spread batter evenly in the prepared pan. Bake for 10–13 minutes, until the center springs back when lightly touched.
Roll the cake: Immediately dust a clean kitchen towel generously with powdered sugar. Carefully turn the hot cake onto the towel and peel away the parchment paper.
Starting from one short end, tightly roll the cake up with the towel inside. Place seam-side down and allow it to cool completely.
Make the filling: Beat cream cheese and butter until smooth. Add powdered sugar and vanilla and beat until creamy and fluffy.
Fill: Carefully unroll the cooled cake. Spread the cream cheese filling evenly over the surface, leaving about ½ inch around the edges.
Roll again: Gently roll the cake back up, this time without the towel. Wrap tightly in plastic wrap and refrigerate for at least 1 hour.
Serve: Dust with powdered sugar, then slice with a sharp knife.

Grate the carrots finely so the cake rolls easily.
Don’t overbake—the cake needs to stay soft and flexible.
Chill the finished roll before slicing for the cleanest swirls.
For extra flavor, add ½ cup chopped pecans or walnuts to the batter.
