🥔🧀 Cheesy Bacon Potato Casserole

Ingredients
2½ lbs (1.1 kg) potatoes, peeled and thinly sliced
8 slices bacon, cooked crispy and crumbled
2 cups shredded cheddar cheese, divided
1 cup sour cream
1 cup heavy cream or whole milk
3 cloves garlic, minced
1 small onion, finely diced
2 tbsp butter, melted
1 tsp salt
½ tsp black pepper
½ tsp smoked paprika
½ tsp dried parsley
2 green onions, sliced
Optional: ½ cup shredded mozzarella for extra cheesiness
Instructions
Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
Prepare the sauce: In a large bowl, whisk together the sour cream, heavy cream, melted butter, garlic, salt, pepper, smoked paprika, and parsley.
Layer the potatoes: Arrange half of the sliced potatoes in the baking dish. Sprinkle with half of the diced onion, half of the bacon, and about ¾ cup cheddar.
Add the remaining potatoes and onion. Pour the creamy mixture evenly over everything, making sure it reaches the potatoes.
Cover tightly with aluminum foil and bake for 35 minutes.
Remove the foil and sprinkle the remaining cheddar and mozzarella over the top.
Return to the oven, uncovered, for 15–20 minutes, until the potatoes are tender and the cheese is melted, bubbly, and golden.
Sprinkle with remaining crispy bacon and green onions. Let the casserole rest for 5–10 minutes before serving.
