Ingredients
2 medium apples, peeled, cored, and chopped
2 large eggs
½ cup (100 g) granulated sugar
½ cup (120 ml) milk
⅓ cup (80 ml) vegetable oil or melted butter
1½ cups (190 g) all-purpose flour
2 teaspoons baking powder
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
Pinch of salt
1 tablespoon lemon juice
Optional: 1–2 tablespoons brown sugar for the top
Optional: powdered sugar for serving
Instructions
Prepare the oven: Preheat to 350°F (175°C). Grease and line an 8-inch (20-cm) round cake pan with parchment paper.
Blend the wet ingredients: Add the chopped apples, eggs, sugar, milk, oil, vanilla, and lemon juice to a blender. Blend until very smooth and creamy.
Combine the dry ingredients: In a large bowl, whisk together the flour, baking powder, cinnamon, and salt.
Make the batter: Pour the blended apple mixture into the dry ingredients. Gently stir just until combined. Don’t overmix.
Bake: Pour the batter into the prepared pan. If desired, sprinkle a little brown sugar and cinnamon over the top. Bake for 35–45 minutes, or until golden and a toothpick inserted in the center comes out clean.
Cool: Let the cake cool in the pan for about 10–15 minutes, then transfer to a wire rack.
Serve: Dust with powdered sugar if desired. Serve warm or completely cooled.
