Ingredients
For the dough
4 cups warm water (about 110°F/43°C)
4 tbsp granulated sugar
4 tsp active dry yeast
8 tbsp melted butter, divided
2 tsp salt
8–10 cups all-purpose flour, as needed
For the cheesy garlic topping
8 tbsp butter, melted
6 cloves garlic, minced
2 tsp Italian seasoning
½ tsp salt
3 cups shredded mozzarella cheese
1 cup shredded Parmesan cheese
2 tbsp chopped fresh parsley
Instructions
Activate the yeast: In a large bowl, combine warm water, sugar, and yeast. Let stand for 5–10 minutes, until foamy.
Make the dough: Stir in 4 tablespoons melted butter and salt. Gradually add the flour, 1 cup at a time, until a soft dough forms. Knead for 5–7 minutes, until smooth and elastic. Add only enough flour to keep the dough from being overly sticky.
First rise: Place the dough in a lightly greased bowl. Cover and let rise in a warm place for about 1 hour, or until doubled in size.
Shape: Punch down the dough and divide it into two equal portions. Roll each portion into a rectangle and place on two greased or parchment-lined baking sheets.
Prepare garlic butter: Mix the melted butter, minced garlic, Italian seasoning, and salt.
Top: Brush the garlic butter generously over both pieces of dough. Sprinkle each evenly with mozzarella and Parmesan.
Second rise: Let the breadsticks rest for 15–20 minutes while the oven preheats to 400°F (200°C).
Bake: Bake for 15–20 minutes, or until the edges are golden and the cheese is melted and bubbly.
Finish: Sprinkle with fresh parsley. Let cool for 5 minutes, then cut into breadsticks.
🍞 Tip
For extra-garlicky breadsticks, brush a little additional garlic butter over the hot bread immediately after it comes out of the oven. Serve warm with marinara or ranch for dipping.
