🥒 Cucumber Bites with Herbed Cream Cheese
Ingredients
2 large English cucumbers
8 oz (225 g) cream cheese, softened
2 tbsp sour cream or Greek yogurt
1 tbsp fresh dill, finely chopped
1 tbsp fresh chives, finely chopped
1 tbsp fresh parsley, finely chopped
1 small garlic clove, minced
1 tsp lemon juice
½ tsp salt
¼ tsp black pepper
½ tsp dried Italian seasoning, optional
Cherry tomatoes, smoked salmon, or fresh dill for garnish, optional
Instructions
Prepare the cucumbers:
Wash and dry the cucumbers. Slice them into rounds about ½-inch (1–1.5 cm) thick. Pat them dry with a paper towel so the topping adheres well.
Make the herbed cream cheese:
In a bowl, beat the softened cream cheese with sour cream until smooth and creamy.
Add the dill, chives, parsley, garlic, lemon juice, salt, pepper, and Italian seasoning if using. Mix until everything is well combined.
Assemble:
Spoon or pipe about 1 tablespoon of the herbed cream cheese onto each cucumber slice.
Garnish:
Top with a tiny sprig of dill, chopped chives, a halved cherry tomato, or a small piece of smoked salmon.
Chill:
Refrigerate for 20–30 minutes before serving for the best flavor.
Tips
For extra crunch, sprinkle the bites with finely chopped walnuts or everything-bagel seasoning.
For a lighter version, use whipped cream cheese and Greek yogurt.
Assemble shortly before serving to keep the cucumbers crisp.
