Loaded Sweet Potato Breakfast Boats with Scrambled Eggs, Spinach, Avocado & Feta

🛒 Ingredients
For the Sweet Potato Boats
2 large sweet potatoes
1 tbsp olive oil
½ tsp garlic powder
¼ tsp salt
¼ tsp black pepper
For the Scrambled Eggs
4 large eggs
2 tbsp milk
1 tbsp butter or olive oil
¼ tsp salt
¼ tsp black pepper
For the Spinach
2 cups fresh baby spinach
1 garlic clove, minced
1 tsp olive oil
Pinch of salt
For the Toppings
1 ripe avocado, diced or sliced
½ cup crumbled feta cheese
2 tbsp chopped fresh parsley or cilantro
2 tbsp sliced green onions
¼ tsp red pepper flakes, optional
Freshly ground black pepper, to taste
Optional: hot sauce or salsa for serving
👩🍳 Instructions
- Bake the Sweet Potatoes
Preheat oven to 400°F (200°C).
Scrub the sweet potatoes and pat dry. Pierce each several times with a fork.
Place on a baking sheet and bake for 40–50 minutes, or until completely tender when pierced with a knife.
Allow them to cool for about 5 minutes.
Slice each sweet potato lengthwise, being careful not to cut all the way through.
Gently press the sides open and fluff the inside with a fork.
Brush the tops and exposed sweet potato with olive oil. Sprinkle with garlic powder, salt, and black pepper.
Return to the oven for 5–8 minutes to lightly crisp the edges. - Sauté the Spinach
Heat 1 teaspoon olive oil in a skillet over medium heat.
Add the minced garlic and cook for about 30 seconds.
Add the spinach and a pinch of salt.
Cook for 1–2 minutes, stirring, until the spinach is wilted.
Remove from the skillet and set aside. - Make the Scrambled Eggs
Whisk the eggs, milk, salt, and black pepper together until smooth.
Melt the butter or heat the olive oil in the skillet over medium-low heat.
Pour in the eggs.
Gently stir and fold the eggs until softly scrambled and just cooked through, about 3–4 minutes. Don’t overcook them. - Assemble the Breakfast Boats
Divide the sautéed spinach between the two sweet potatoes.
Spoon the scrambled eggs over the spinach.
Add diced or sliced avocado.
Sprinkle generously with crumbled feta.
Finish with green onions, parsley or cilantro, and red pepper flakes if desired.
Add a little freshly ground black pepper and your favorite hot sauce or salsa.
