🛒 Ingredients
1 pound ground beef
1 packet taco seasoning
1/2 cup water
12 wonton wrappers
1/2 cup shredded cheddar cheese
1/2 cup sour cream
1/2 cup diced tomatoes
1/4 cup diced green bell pepper
1 jalapeño, sliced
Salt, to taste
Cooking spray or a little oil

Preheat the oven to 375°F (190°C). Lightly grease a 12-cup muffin tin with cooking spray.
Cook the beef: Heat a large skillet over medium-high heat. Add the ground beef and cook for 6–8 minutes, breaking it apart with a spoon, until browned. Drain any excess grease.
Season: Stir in the taco seasoning and 1/2 cup water. Simmer for 3–5 minutes, stirring occasionally, until the mixture thickens. Taste and add a little salt if needed.
Build the cups: Place one wonton wrapper into each muffin cup, gently pressing it down and up the sides.
Spoon about 1–2 tablespoons of taco beef into each wrapper. Sprinkle with a little cheddar cheese.
Add another wonton wrapper on top of each cup, rotating it slightly so the corners don’t line up. Add another layer of taco beef and cheddar.
Bake for 12–15 minutes, or until the wonton edges are golden brown and crisp and the cheese is melted.
Finish the toppings: Let the taco cupcakes cool for 2–3 minutes. Top each with a small dollop of sour cream, diced tomatoes, green bell pepper, and a slice of jalapeño.
