🍍 Mom’s Classic Sweet Chili Pineapple Sauce
A sweet, tangy, slightly spicy sauce that’s perfect for chicken, shrimp, meatballs, pork, wings, or dipping!
🛒 Ingredients
1 cup pineapple juice
½ cup crushed pineapple
½ cup sweet chili sauce
¼ cup brown sugar
¼ cup rice vinegar
2 tbsp soy sauce
2 cloves garlic, minced
1 tbsp fresh ginger, grated
1–2 tbsp sriracha or hot sauce, to taste
1 tbsp cornstarch
2 tbsp cold water
1 tbsp butter
Optional: 1 tbsp lime juice

Combine the sauce: In a medium saucepan, whisk together pineapple juice, crushed pineapple, sweet chili sauce, brown sugar, rice vinegar, soy sauce, garlic, ginger, and sriracha.
Simmer: Bring the mixture to a gentle simmer over medium heat. Cook for 8–10 minutes, stirring occasionally, until the pineapple softens and the flavors come together.
Thicken: Mix cornstarch with cold water in a small bowl to make a slurry. Slowly whisk it into the simmering sauce.
Finish cooking: Continue simmering for 2–3 minutes, stirring constantly, until the sauce becomes glossy and thick enough to coat a spoon.
Add butter: Remove from the heat and stir in the butter. Add lime juice if desired for a little extra brightness.
Taste and adjust: Add more sriracha for heat, brown sugar for sweetness, or rice vinegar for extra tang.

Toss it with crispy chicken, grilled shrimp, pork chops, meatballs, or chicken wings, or serve it warm as a dipping sauce.
